Description

Saithe – Pure Nordic Character and Sustainable Quality

  • Discover saithe (Pollachius virens):

A fish of the northern seas, saithe belongs to the Cod family, Gadidae, and is appreciated for its white, firm flesh, balanced taste, and versatility in the kitchen. The same genus also includes LUBBE (Pollachius pollachius), considered the related species, yet Saithe stands out through its distinct identity and its well-earned place in European gastronomy. This fish brings freshness, flavor, and a strong marine identity to the plate. The scientific name Pollachius preserves echoes of the North Atlantic fishing tradition, being associated with a Latinized origin from a Scottish dialect, which strengthens its authentic identity and its connection to the northern maritime world.

  • A species with real value in the European market:

Saithe is not just a fish appreciated locally, but an important commercial species in the Eastern Atlantic, with catches that have historically reached hundreds of thousands of tons per year. This clearly shows that we are not talking about an obscure fish, but about one that is relevant to European seafood consumption, well known in trade and valued in different markets under names such as saithe or coalfish.

  • Authentic taste and versatility in the kitchen:

Saithe is appreciated for its firm texture and clean taste, which makes it suitable for many methods of preparation. Whether fried, baked, or grilled, it keeps its character and offers a balanced culinary experience, with a clear marine identity and a clean presentation on the plate.

  • Nutritional value and natural energy:

Beyond its taste, saithe provides a valuable source of high-quality protein, B vitamins, and other important nutrients for a balanced diet. This combination of nutritional value and culinary consistency makes it appreciated both in everyday meals and in more carefully selected dishes.

  • Responsible fishing and respect for nature:

Choosing saithe also means supporting a responsible relationship with the marine environment. We place great emphasis on controlled sources, respect for the balance of the ecosystem, and practices that support the protection of marine biodiversity. When available with MSC  (Marine Stewardship Council) certification, this reflects a commitment to sustainability and responsible fishing.

Nordic delicacies, pure vitality!

Note: Although it belongs to the cod family, saithe is a distinct species and should not be confused with or marketed as Black cod. There is no scientific species specifically called black cod; this name has been established in marketing for Sablefish (Anoplopoma fimbria) in order to present its distinct commercial value in a more attractive way.
